How do you know when a papaya is ripe?

Ripe papaya turns mostly yellow or orange and yields to gentle pressure from your whole palm. Papaya does ripen after picking, so a part-green one will get there on the counter in a few days.

What to check

Feelgentle give in the palm, much like a ripe avocado. Mushy or leaking has gone too far.
Smellsweet and slightly musky at the stem end. Sharp or fermented means overripe.
Buying for whena quarter yellow for later in the week, two thirds or more for tonight. A papaya that is fully dark green and rock hard was cut too early and will go soft without ever going sweet.
Avoidsunken dark round spots. That is a fungal rot that spreads into the flesh, and it is the most common papaya defect on a store display.
Notedried white streaks or crusted patches on the skin are latex, which mostly comes from fruit that was handled while still immature.
Common mistakepicking the softest one on the display. Papaya is a high-shrink item, so it is put out in small quantities and then squeezed by every customer who walks past. Soft usually means handled rather than ripe, so take the one with the fewest thumb marks. And do not refrigerate a green one to save it: papaya takes real chilling damage below about 50F, so cold stalls the ripening and it ends up bland.

If they are not perfect: a rock-hard green papaya is not a failed purchase, it is a different ingredient. Green papaya is what Thai green papaya salad is made from. Shred it, dress it with lime, fish sauce and chili, and it is excellent.
