Should you refrigerate tomatoes?

Not until they are fully ripe. Cold interrupts ripening and mutes the flavor compounds, which is why fridge tomatoes taste flat. Keep them on the counter, stem side down, until they are ripe, then use them or refrigerate for a day or two at most.

Good to know

Underripe tomatoes ripen on the counter; a sunny windowsill is not needed and can soften the top before the inside catches up.
If a ripe tomato has to go in the fridge, let it come back to room temperature before eating, some flavor returns.
