Check the cut end of the stalk before you look at anything else. It should be moist, pale green and solid, because dried, brown, split or hollow-looking means the head has been out of the field a long time however good the crown looks. After that, yellowing florets are the first sign of age, and a slimy film or a strong sulfur smell means it is done.

Check the boxbead size is the quality read, and it is different from the freshness read. The little buds on the crown should be tight, small and even. Big, loose, coarse beads mean the head was cut over-mature, and it will taste strong and eat woody even if it is perfectly fresh.

Not a problema purple or blue-gray cast on the florets. That is pigment from cold weather in the field, and those heads are often sweeter.

Not a problema hollow cavity with a brown lining inside a thick stalk. That is a growth disorder from fast growth, not rot and not a safety issue. It means a woody stalk, nothing more, and people bin good broccoli over it every week.
Common mistakebinning it at the first hint of yellow. Yellowing broccoli is still safe to eat, just stronger and more cabbagey, so it roasts perfectly well even when it is past its best raw.
Worth knowing about price: crown-cut broccoli is trimmed before it reaches the store, so you pay a higher price per pound for less usable weight. A bunched head with the stalk attached is cheaper, and the stalk is the sweetest part of the plant. Peel the tough outer skin, slice the core into coins and cook it with the florets.
